just some hints:

please donĀ“t kling too much to the manual in this point. The folder
"projects" is not necessary. The manual refers to the opencms-website as an
example (you can download the whole website of opencms as a .zip-file) and
if you have a look at the website you will see that there is a navigation
entry "projects".
As far as I remember, the 5.0beta2 per default has a offline project
(containing all folders from root on)in which you can work, e.g. create own
pages an folders and afterwards put them online (that means copying the
folders to the online project)

Creating a new folder is the same as creating a new page (page 8 manual),
just select folder.
One more thing: structure has changed!
all the "system" folders mentioned in the manual have been put together!
That means:
/content (with all the templates and Elements) has been moved to
/system/modules/default
/pics and /download etc. have been moved to /system/galleries/
/content/bodys has been moved to /system/bodies/
and so on
you will find your way through it
