Both should work and in the past I have used opencms with both versions. 
I recommend to use Tomcat 5.5, because it contains performance 
improvements over 5.5.

You might also want to try tomcat 6.0 because again, it has benefitted 
from serious performance work that is not yet present in 5.5 or 5.0, but 
this depends of course on your hosting environment.
