Of course you can always add thich search index in the
opencms-search.xml manually, but it should be able via the Admin
interface as well. But I have nto tested this.
What is this new "offline" mode about:
There are three different modes for a search index:
manual: This search index is only rebuild if you press the "rebuild
search index" button in the Admin view or by the corresponding scheduled
job.
auto: This search indes is automatically updated when you publish
something that is in the scope of this searhc index. This is the default
setting you use for most search indexes
offline: This search index is updated when a resource which is in the
scope of this search index is modified (writen) or one of its properties
is modified. It is used to creade a search over the offline project
which is automatically updates when the resources in the offline project
change. Redindexation id done automatically in the background and can
take a few seconds after the resource has been modified.
The idea behin this new index is that you have a search in the offline
project which is always up-to-date without publishing anything. Sure,
you can define a "normal" search index which uses the resoruces of the
offline project, but if this index is set to "auto" mode, it will only
be updated when you publish something. So you cannot search your
new/modified resoruces before publishing. And this is there the new mode
"offline" should be used.

Kind Regards,
Michael.
