Yes, it is, unpack the opencms.war, and add your modules (or remove)
in the directory: opencms/WEB-INF/packages/modules/ (repack
opencms.war if you want)

About to change the default-uri, i'm not sure what you want, but take
a look in opencms/WEB-INF/web.xml and the context-param
WebApplicationContext.
