For this configuration we should use the current method.

Well, if people know how to fill the database form they should certainly
know how to configure a datasource on their app server, especially
considering that nowadays all appservers include a nice web-based tool
for doing it (including Tomcat).

Yes. This is the best solution. The setup wizard could ask for the JNDI
name of the DataSource.
